Veg Sushi

Our family loves sushi. We haven't always lived near sushi restaurants or wanted to spend the money. We started making our own a few years back. It's easy. I found a site for brown rice sushi that we began using and it's a simple, good one. If you follow the directions on her site for the rice, you can also find recipes to replicate 'rolls'
I've included a 'recipe' for our typical ingredients. Enjoy!
Vege Sushi

Prep Time: 30 minutes
Cook Time: none
Ingredients (Enough for 8 large rolls)
- 3 cups cooked sushi rice
- 1 package nori sheets
- 1 sushi roll mat
- 1 jar dye free sliced ginger
- wasabi, soy & rooster sauce to taste
- 2 tablespoons sesame seeds
wash and thinly slice the following
- 1 ripe avocado
- 1 red or yellow bellpepper
- 1 handful micro greens
- 1 cucumber
- 1 zucchini
- 1 jalapeno
- 1 handful spinach
- 1 cup cherry tomatoes
- 6 asparagus spears
- 1 carrot-curled w/a vege peeler
Instructions
Prepare an assembly line of ingredients.
Follow directions for preparation from favorite sushi site.
Only add some ingredients to each roll for different flavor combinations.
Be sure to wash knife repeatedly while slicing the rolls.
Serve with sauces and ginger.
If you buy more than one sushi mat (Cost Plus) the kids can join in the fun. We tend to make all of the rolls and then serve them on a cutting board/serving platter.
