Gluten and Dairy Free Bread Crumbs

I've been on a roll lately making crappy gluten free bread. Just because we eat gf and dairy free, doesn't mean we should settle for unpalatable styrofoam. I'm amazed at what gf folks will put up with. Nope, not us, we refuse to 'get used to it.'
It's been looking like this around here for about a month: too soggy, fix the temp, too dense, fix the flours, too crumbly, get frustrated and buy a loaf instead. I really can make great GF bread. My friend and I have been reworking some really good recipes to be oil free, then egg and oil free, then better nutrition etc. etc. etc. Then my tried and true recipes went in the compost.
Duh! Slice it up and make breadcrumbs. I'll use them eventually and they can be frozen. The next time you buy before you try GF bread, make bread crumbs. Don't buy crumbs, they are usually corn bits.
Gluten Free Dairy Free Bread Crumbs
- cover baking sheets with slices, bits and heals of bread (I happen to have a pan with holes)
- bake at 300 for 10-15 minutes
- once dry but not burned remove and cool
- pulse in small batches in a food processor until coarse crumbles
- store in an airtight container
